Teff Peanut Butter Chocolate Chip Cookies

Every time i make these cookies, they fly out of the cookie jar. Teff flour is gluten free and loaded with fiber and minerals - i highly recommend it to those with gluten intolerance and those who just enjoy good cookies and want to add more fiber-rich foods in to their diet.
Ingredients:
1 1/2 C teff flour
1/4 tsp sea salt
1 tsp baking soda
1 C chunky 100% peanut butter
1 C pure maple syrup
1/2 C dark chocolate chips
Directions:
Preheat oven to 350 degrees F.
Combine all dry ingredients then add all of the wet ingredients. Do not overmix . Fold in chocolate chips.
Line a cookie sheet with parchment paper.
Drop batter by heaping teaspoons on to cookie sheet.
Place in oven and bake for approx. 13 minutes or until lightly browned. Make sure not to overcook them.
Remove from oven and place directly on wire rack to cool.
Makes 20 cookies filled with heavenly goodness...enjoy!
