Coconut Date Macaroons

Vegetarian, Vegan and Gluten-free

(Yields 12)

Ingredients:

8 dates, pitted

1 C organic shredded and unsweetened coconut

1 banana

1/4 tsp sea salt

Directions:

Preheat oven to 325 degrees F.

In a bowl, mix dates, coconut, banana, and sea salt.

Form in to balls and place on a parchment-paper-lined cookie sheet.

Place in oven for 10-15 minutes until slightly browned.

Remove and let cool.  Can be kept in the refrigerator for up to two weeks and can also be frozen.

Enjoy on their own or with a cup of tea.
