Chocolate Mojito Mint Smoothie

I love the combination of mint and chocolate ANY time of year but especially when I can use fresh mint from my garden.  This summer I planted Mojito mint for the first time and it has yet to disappoint my tastebuds.  Not only does this smoothie combination taste decadent, it is filled with so much health and vitality...calcium from the kale, magnesium from the cacao, healthy fats from the coconut oil and avocado, potassium from the banana, and pre-biotic dietary fiber, vitamins, minerals and poly-phenolic flavonoid antioxidant compounds from the mango.

Chocolate Mojito-Mint Smoothie

(Serves 2)

Ingredients:

1 banana

1 C frozen mango

1 TBSP raw cacao powder

4 Mojito mint leaves (any mint variety will be fine)

1 C filtered water

1 TBSP coconut oil

1 large stalk kale

1/4 of an avocado

Directions:

Place all ingredients in a high-speed blender and blend until smooth.  Pour in to a glass and serve with a sprig of mint.
