Sally’s Roasted Delicata Squash

Ingredients:

1 delicata squash

Directions:

Preheat oven to 400 degrees F. 

Slice in rounds or lengthwise and place on a parchment-paper-lined cookie sheet.  You can either remove the seeds before roasting or roast with the seeds. Once roasted, remove the seeds, place in small mixing bowl and mix in a pinch of sea salt and pepper. The seeds are delicious on their own or in a salad.

Place in oven and check them after 15 minutes.  You can flip them at that point and roast for an additional 5-10 minutes.

Remove from oven and feel free to add a little bit of unrefined olive oil and a pinch of sea salt.  I usually don’t add anything at all because they’re delicious all on their own.
