Sally's Quinoa Fritters

A favorite of my entire family, these fritters are simple, tasty, nutritious and fun to make. I give them to my daughter to take to school for lunch or a snack. They're an excellent "take along" to work for a quick pick-me-up and also make an excellent meal. I love bringing them to potlucks for an appetizer and couple them with some hummus or drizzled with a light and zesty tomato sauce. Experiment and let me know about your experience!

1/2 C Quinoa

1/4 tsp. sea salt

8 oz. cauliflower or broccoli florets

1/4 C grated parmesan cheese

2 large organic eggs

2 Tbsp. chopped italian parsley

1 Tbsp. whole wheat breadcrumbs

1/4 tsp. ground black pepper, or more to taste

Directions:

Heat quinoa over high heat stirring constantly until it starts to make popping sounds. Add 1 C of water and salt and simmer covered until all water is absorbed. (10-15 minutes). Let quinoa cool.

Meanwhile, steam cauliflower (or broccoli) 8-12 minutes until soft...drain and chop up to small pieces.

Preheat oven to 450 F. Mix quinoa, cauliflower (broccoli), parmesan, eggs, parsley, breadcrumbs and pepper into a large bowl. Mixture will be moist and loose.

Shape into 12 equal 3-4 inch patties and place on parchment paper-covered cookie sheet and bake approximately 20 minutes until the fritters are golden brown along the sides.

Serve with tomato sauce, salsa, hummus, or can be served plain. Also great cold the next day!
