Vanilla Coconut Chia Energy Truffles

I am always looking for new ways to satisfy my “sweet” tooth and recently stumbled upon this delightfully simple, satisfying and DELICIOUS dessert. These truffles are raw, vegetarian, and pure yum!!! If you wanted to make these vegan, you could switch the honey with pure maple syrup.
The coconut oil and shredded coconut provide me with sustainable energy and the chia seeds provide a great source of omega-3 fatty acids and fiber. The cashews give me protein and the honey is just the right amount of sweetness...I’m set!
Ingredients:
1/4 C honey
1/4 C organic unrefined coconut oil
1/2 C finely shredded unsweetened coconut
1/2 C raw organic cashews
1/4 tsp. vanilla
4 TBSP chia seeds
Pinch of sea salt
Instructions:
Place coconut and cashews in Vitamix or food processor and blend until you reach a flour-like consistency.
Remove from blender and place in bowl. Melt coconut oil over a double boiler until liquid. Add honey, coconut oil, vanilla, chia seeds and sea salt to bowl and mix until well combined.
Chill in your refrigerator for approximately 30 minutes. Once mixture is chilled, scoop with a spoon and roll into balls and chill again for at least 10 minutes.
Keep refrigerated until ready to eat. These are also fine to freeze.
