Raw Kale, Orange and Avocado Salad with Grape Tomatoes 

Serves 2-4

This salad can be an entire meal if you add in a protein, such as pan-sauteed tofu (as shown in the picture), chicken, salmon or beef.  I also serve it as a side salad...as usual, there are many options.  Enjoy!

Ingredients:

1 bunch of kale, washed and chopped

1⁄2 avocado, sliced

2 TBSP chopped walnuts 

1/2 C sliced grape tomatoes (I like slicing them in half horizontally)

2 oranges (1 for the dressing, and 1 for the salad) 

2-3 TBSP extra virgin olive oil

1 pinch sea salt and black pepper

Directions:

  1. Tear leaves of kale off of the stalks and massage the kale in your hands for a few minutes. The “massaging” helps to reduce the bitter flavor of the kale and, at the same time, tenderizes the kale.

  2. For the dressing, squeeze the juice of one whole orange into a bowl and add in the olive oil, sea salt and pepper. Mix thoroughly and set aside.

  3. Place the washed, chopped and massaged kale in to a large bowl. Add in the sliced avocado, tomatoes, and walnuts. Peel the second orange, cut up and add to the salad.

  4. Pour the dressing on the salad and let sit for at least 5 minutes or up to an hour.
