Raw Zucchini Pasta
Raw Zucchini Pasta
(serves 2)
I love eating with the seasons and Spring is a great time to introduce some fresh zucchini to your meals. This recipe is super simple and perfect for lunch or dinner.
Ingredients:
(organic if possible)
1 medium - large zucchini
1/2 red pepper
1/2 orange pepper
1/8 C raw apple cider vinegar
1/4 C extra virgin olive oil
1/4 tsp oregano
Sea salt and pepper, to taste
Fresh parsley (for garnish)
Directions:
Slice zucchini vertically in very thin strips. If you have a spiralizer the tool will do it for you and it's so much fun to use! I like the Paderno World Cuisine brand
Dice peppers and add them in.
In a separate bowl, whisk together all of the other ingredients. When finished, pour over pasta, mix together and top with some fresh parsley.
